Cooking school lunches from scratch can fix labor and supply issues (Washington Post; Gaddis)

School cafeterias are losing funding, resulting in a decrease in healthy meals available for students. Associate Professor Jennifer Gaddis advocates that cooking from scratch offers a solution to this issue by enabling the farm-to-school supply chain.
